MAIN DUTIES & RESPONSIBILITIESAs Sous Chef, you will lead the kitchen brigade and replace the Head Chef in his absence. In doing so, you will monitor the quality of the work of the kitchen staff and its progress. You supervise the compliance with legal regulations in the field of safety and hygiene. You are also the sparring partner of the head chef in determining the menu and coming up with new recipes (with corresponding calculations/price setting) and there is room for your own creativity.

As Sous Chef you will passionately prepare beautiful dishes for our guests. The main tasks involved are:

  • Assigning work, giving directions and instruction;

  • Participate in the execution, where you know how to inspire and motivate employees;

  • Rotate in one of the parties;

  •  Supervising the progress and execution quality of the work, receiving and handling questions/complaints in the absence of the Head Chef;

  •  Supervise compliance with safety, health and safety and HACCP regulation;

  • Supervising the quality of dishes issued in the absence of the Head Chef;

  •  Responsible for training and induction of employees;

  •  Ensuring high food quality;

  • Co-responsible for all operational business matters in the kitchen;

  • Trying out and evaluating new recipes in consultation with the Head Chef;

  • Passing on orders to suppliers;

  • Investing in a pleasant cooperation with the service staff;

  •  Working according to the guidelines of Marriott International.
